Can you get reliable internet to a barn several hundred yards from the house?

Yes. Usually a directional wireless link between buildings, or buried fibre if the ground is already being opened. Both are dramatically more reliable than consumer extenders, which is what most farms have tried first.

Will foaling cameras actually work at night?

With proper low-light cameras and correct placement, yes. Infrared range and mounting position matter far more than megapixels for that job, and it is the most common thing done wrong.

Can visitors use the WiFi without reaching our records?

Yes. Guest access sits on a separate network that cannot see your business systems, so a vet's laptop is never a route into your breeding or accounting data.
